THISTLE HONEY – cardo

Amber color, liver detoxifying. As spontaneous flower it is produced in non-cultivated wilderness areas. The intense spicy aroma, strong and distinctive flavor with a bitter aftertaste, makes it an ideal accompaniment with full-flavored, mature cheeses, or with pecorino and blue cheeses.

Indicated for liver diseases, slow digestion, blood circulation problems, digestion; stimulates and detoxifies the liver, effectively cardiostimulator and vasoconstrictor.

Thistle honey can be enjoyed on its own, at breakfast, melted over toast with a dab of butter, as appetizer with crispy bread and cheeses or as dessert, drizzled over fruit salad or yoghurt.

The thistle flower grows wild only in areas free from pesticides and chemicals used in commercial agriculture and horticulture.

The wild thistle honey from Sardinia has been recognized by the Slow Foods Ark of Taste (an international catalogue of endangered heritage foods) as a unique and limited production product worthy of distinction.
